My understanding is that the Jewish observance of Passover normally includes the singing of Psalms 113-118 -- collectively referred to as the Hallel ("Praise") psalms -- at various points during the Passover meal. Since the hymn mentioned by Matthew occurred at the conclusion of the meal, I would say that it would have been Psalm 118.
