In my humble opinion, I think that what they are saying is "I love you in Jesus' name (Amen), as many prayers are ended. This conveys to the recipient that they are Christians and believe in the Triune nature of God The Father, God the Son and God the Holy Spirit and not just a belief in God as a Diety or Supreme Being. This also goes along with Jesus' Great Commission to Love Others as I have loved you.
