What does it mean that the Son of Man will 'reward each person according to what they have done?'

KJV - 27 For the Son of man shall come in the glory of his Father with his angels; and then he shall reward every man according to his works.

In my opinion, Jesus in this verse is not indicating or teaching "salvation by works". The only criterion with regard to the granting of eternal life with God remains faith in Christ (Ephesians 2:8-9).

However, those who will spend eternity separated from God will, in a sense, be condemned by their works, since they did not avail themselves during their earthly lives of the only means that God has provided by which we can receive eternal life -- that is, faith in Christ. 

Those who are saved will not receive salvation and eternal life on the basis of their works, but because of their faith in Christ. However, the saved will then be eternally rewarded by Christ in proportion to their actions as Christians that they perform in love and service to God and to their fellow human beings, in gratitude to God for the salvation that He has granted them for Christ's sake (1 Corinthians 3:11-15).

What greater reward could any true Christian look forward to better than knowing they will have chance in future to be joined by their loved ones and others they cared about and may have witnessed to, prayed for and maybe just unknowingly set Christian example for? These would seem to be eternal treasures of value beyond our greatest imagination and would be a truly awesome REWARD.
