Why did God make sex before marriage a sin if he blesses those who are not married with children?

Doesn't make sense to me that children, the product of sex, would be produced by people who aren't married if it's a sin for them to have sex.

I would agree that children are a blessing, but they are also a consequence and a responsibility. 

In my opinion, among the reasons that God made premarital sex a sin (aside from the unique "one-flesh" aspect of the sexual relationship between the man and the woman) was His knowledge of the commitment of marriage as being the optimal environment for the growth and nurture of children.

In the case of unmarried couples, the partners are, in a sense, judged because of the obligation that comes with the sexual relationship and (especially) with parenthood in the willful absence of a formal commitment by each to the other. And they are doubly judged if they fail in carrying out that responsibility, or if they forsake the relationship to avoid it, which (in my opinion) is already indicated to be more likely by the same traits and basic self-centered orientation that led them to decide in the first place to have children outside of that commitment.

Sex outside of marriage is a sin because God says it is so. God ordained the relationship of a man and woman inside a marriage as his "perfect will" for human beings to develop a loving, life committed relationship that would form the basis for a perfect family unit to bring children into the world. God doesn't want children born into unloving relationships. God doesn't want children aborted as that's murder. God doesn't want humans having sex and preventing procreation, by using contraceptives, because that threatens the human race with extinction and is not God's perfect will for us.

Having children is not necessarily a sign of God's blessing. David had an adulterous relationship with Bathsheba which resulted in a child. David killed her husband and then married her. But the thing David did "displeased the Lord" (as scripture says). God confronted David with his sin and told him that the consequence of his sin was that the baby born from this adultery would die. The baby did die. But God forgave David. His blessing was to give David and Bathsheba another child whose name was Solomon. Then God told David that Solomon would be the next king of Israel.

Having sex before marriage is wrong in God's eyes, because this "one flesh" union has no meaning other than physical pleasure. It is not the expression of the joy and ecstasy of a man and woman who love each other and are committed to each other for life. You see, marriage (and sex within marriage) is given by God as a witness and testimony of the relationship between Christ and his church. 

Sex within marriage is supposed to express Christ's relationship with his church. When Christ is moving in his church by the power of his Holy Spirit, those who are ministering in Jesus name can testify that the joy and ecstasy that comes from delivering God's blessings and love to people who need them, far exceeds the joy and ecstasy that comes from physical sex - and especially so when that sex involves no abiding love and committed relationship. In my view, nothing surpasses the pleasure of sharing the gospel and watching someone come to faith in Jesus Christ. This is pure joy and it lasts forever.

The verse that you have cited is actually speaking in illustrative language about the children of Israel worshipping the god of the Moabites or Baal. All through the Old Testament God speaks through His prophets by calling the worship of any other god of the peoples around Israel as whoring. Exodus 34:15. Exodus 34:16 talks of both physical whoring and spiritual worship as whoring Leviticus 17:7 and Leviticus 20:5 also use these words.

Many other verses use this illustration. As to your question, we could say why does God allow anything that could be considered a blessing happen that may have a sin involved in the course of actions that we weak humans do.

The only answer has to be God's mercy is hard for us to understand, and His mercy is undeserved but real. Ephesians 2:4-7
