Actually, the answer is given right in the bible verse. To die in sin is to reject that Christ is God, our Savior, and to reject Christ's offer of forgiveness of our sin(s). 
John 8:24: I told you that you would die in your sins, for unless you believe that I am he you will die in your sins.

John 3:16-18 elaborates and provides more of an overview of this topic wherein John describes what Jesus does for us, the good consequences of believing that Jesus is God, and the terrible consequences of rejecting this truth.

It is not enough to just say that you believe in God in order to receive salvation. Even the demons believe in God but at least have the decency (fear and acknowledgement of Gods Holiness) enough to tremble; (James 2:19). 

You must repent in order to receive salvation. 'Easy believism' is not enough. The root meaning of repentance is a change of mind and heart and purpose; it is a deep sorrow compunction or contrition for a past sin wrongdoing or the like. The only way to repent is to have true godly sorrow. There's a difference between regret and repentance. Some people are sorry for being caught in the act of sin, but not repentant of the sin itself. 

Sin is not a weakness or unfortunate happening or a mistake. It is a transgression of divine law, and active. It's regarded as such a transgression, especially a willful or deliberate violation of some religious or moral principle. Any reprehensible or regrettable action behavior or lapse saying is a personal guilt, and each one independently will give an account of his or her own sin. 

If you die without ever repenting of your sins and acccepting the Holy Spirit, you are dying in Sin.

God sent His Son Jesus Christ to die the anointing death for us to enable us to get a new life. He accomplished this by the finished work on the cross. For those who believe in Him, he has given a new life of completely new existence. His gift is free, extended by grace and received through faith. For others, dying in sins will be the consequences.

John 8:24 says that unless we believe Jesus Christ that died for our sins, we will be dying in sins.

To die in Sin is not believing in God. You're not being obedient to the Word. You are living in the world and not of the Spirit.
